Chicken Parmesan

One meal that makes me feel like home-


Ingredients?

2 eggs
Flour
Panko (or breadcrumbs)
4 boneless and skinless chicken breasts
1 box of penne pasta
1/2 onion (chopped)
1/2 cup of button mushrooms (sliced)
2 cans of chopped tomatoes
Parsley
Rosemary
Water
Extra virgin olive oil
Salt
Pepper
Freshly grated Parmesan cheese

How?

Let's prepare the chicken breasts first.
First we set up 3 flat plates,
One for flour, one for 2 beaten eggs, and one for panko.
If you can't find panko at your local grocery store, substitute it with breadcrumbs.

Dip the chicken breasts according to the following sequence,
flour, eggs, panko.


I always use my left hand for dipping the chicken with dry ingredients (flour and panko),
Right hand for wet ingredient (egg),
It's a good technique that prevents yourself from making a mess,
Which means having wet flour chunks sticking on every fingers.

So the chicken breasts should look like this now-


Ready for the easy yummy sauce?
Pour 2 cans of chopped tomatoes in a small pot along with about 1/3 cup of water,
Bring to a boil, add about 2 tablespoons of rosemary and 4 tablespoons of parsley.
Don't forget to sprinkle some salt and pepper.
Turn down the heat and let it simmer for at least 15 minutes.

Preheat the oven to 375 degrees Fahrenheits.
Get a skillet ready,
Drizzle some olive oil and toss in the chicken when it's sizzling hot.
About 2 to 3 minutes on each sides.

Transfer to a baking dish,
Top the chicken with the tomato sauce we made earlier.
Remember to save about half of the sauce for the pasta later.
Grate some fresh Parmesan cheese over the sauce,
Into the oven for 25 to 30 minutes.

While the chicken's almost done,
Make the pasta according to the instruction on the package.
Have another skillet ready.
Again, drizzle some olive oil, toss in the chopped onions and cook for about 3 minutes,
Add the mushrooms and the remaining tomato sauce.
Cook for few minutes.
Drain the pasta and toss it in to the sauce pan.
Combine well.

The chicken should be ready by now,
Take it out of the oven and let it sit for 5 minutes.
Sprinkle some chopped parsley and grated Parmesan before serving.
