Rice with X.O. Chili Sauce and Pork

Trying to manage a simple meal by using this X.O. Chili sauce I got from my lovely neighbors in Taiwan.
(They got the sauce During a trip to Hong Kong)

X.O. Chili Sauce-


What's in the sauce?

Dried shrimps,
Shrimp roe,
Conpoy 干貝,
Yunnan ham,
Red chili,
And peanut oil.

Rice with X.O. Chili Sauce and Pork-



Ingredients:

Pork (sliced)
Shitake mushroom (5 of them, sliced)
Spinach
Onion (half and sliced)
2 Eggs (beaten)
Scallion (one should be enough)
Extra Virgin Olive Oil
Corn starch
Soy sauce
Mirin
Salt
Rice (duh)

How?

As usual,
Drizzle some EVOO in the frying pan,
Toss in the onion, along with a pinch of salt,
Keep frying till the color turns translucent.

Toss in the pork,
Remember to marinate the pork slices with soy sauce and one tablespoon of mirin before head
for about 10 mins.
Don't forget to "massage" the meat!

Toss in about 4 spoonful of that yummy X.O. Chili sauce in the pan.
Ok, so after stir-frying the pork for about 5 minutes,
Add in the mushrooms,
One minute,
Now it's spinach's turn to jump into the pot.

After a while,
Pour in some water till slightly over the top of all the ingredients,
Bring to a boil,
Taste it first,
Add more soy sauce or X.O. Chili sauce if desired.

Stir in the corn starch (dissolved in hot water first),
Keep stirring it because you don't wanna see chunks of corn starch in your gravy.
After everything's mixing well,
Add the beaten egg and stir it once or twice.
Only once or twice!
If you stir it too many times,
The whole gravy will become dirty with unpleasant yellowish color.

There you go.
One easy simple meal.
