Bacon Wrapped Asparagus

So it is,
My last post in 2007,
Proudly present you this simple and delicious appetizer,
And wishing you a fabulous Happy New Year!

Bacon Wrapped Asparagus-


Ingredients?

8 green asparagus
8 slices of cured bacon
Extra virgin olive oil
Salt
Freshly ground black pepper

How?

Turn the oven to broil.

Rinse the asparagus,
Remove the tough skin near the stem with a peeler,
I just carefully run my knife through it,
Too lazy to wash the peeler.
*Don't forget to trim the hard leaves too (the semi-red colored part)

For wrapping the asparagus,
Starting from the stem,
Use one slice of bacon and circles one asparagus all the way to the top.

Place the wrapped asparagus in a baking dish,
Remember to put the end of the bacon wrap side down.
Drizzle some olive oil, small pinch of salt, and some freshly ground pepper.

Transfer to the oven and cook till the bacon turned slightly brown on all sides,
Don't forget to turn the asparagus once every few minutes,
We want evenly cooked bacon, not a charcoal bacon on one side!

  4. Cindy, i loved your blog. Since i am a PROFESSINAL CHEF (educated in Brooklyn), i really love asparagus. But down here in Florida it is so expensive, and i have already used up my $100 grocery store gift card my brother gave me for Christmas.

    I think I got "gouged" on my fake crab meat (spelled with a "K") at walmart. But with the transmission out on my '95 ford pickup, i had to walk to get my groceries.

    Anyway, i took green onions and wrapped them in flattened out fake crab meat. They were a hit at my New Year party (i had 27 friends attending my party here at the trailer park).

    Although your snacks were obviously far better than mine, the fake-crab-meat-wrapped-green onions were scarfed up by "THE MANAGER'S" family.

    Crab meat wrapped scallion?!
    That sounds so good (I'm always a big fan of artificial crab meat).
    My friends can't never figure out why I love artificial crab meat so much.
    I always put a whole bunch of them in the soup while eating Chinese hot pot!
    I should definitely give it a try next time!

  9. I tried this recipe recently using a pound of bacon and a whole lot of asparagus (I wrapped 2 spears in each bacon) and served it as an entree.

    I omitted the oil and salt (figuring bacon has enough of that on its own) but coated them in honey and cracked pepper before cooking them on a broiler pan.

    These were delicious!! A sweet-salty-peppery delight, and they look really pretty on the plate. I served em with rice seasoned with butter, lemon, and fresh parsley. YUMMM.

    It was kind of a pain to flip so many, I think next time I'm going to use a fish basket
