Instant Breakfast in 5 Minutes

I woke up with an empty stomach this morning,
My intuition told me to go downstairs, open the fridge, and search for food.
However,
As it's approaching my move-out time back to Irvine,
There's literally nothing left in the fridge.

I was all excited ready to make chocolate souffle,

Bang!
I used up all the eggs the other day for lunch...
Filled with disappointments and frustration,
I have to make something else to eat,
My hungry level was creeping up to 9.

So,
I finally managed to make something out the leftover ingredients here and there.

Soba with Chinese Yam Soy Sauce-


Ingredients:

Chinese yam (grated - 山藥泥)
Japanese soup base
Ponzu sauce (just a few drops)
Scallion (chopped)
Dried seaweed flakes
Soba

How?

Cook the soba in boiling water for about 5 minutes,
Rinse with cold water and set aside.

Combine all other ingredients and here's the sauce you have for the noodles.

I usually add one raw egg yolk, but...
No eggs whatsoever in the house.
I'm happy with this not so bad meal regarding my short in supply ingredients.
